You could cut carrots thin enough to see through. Now both of you have me thinking about knives. The last knife I bought was a giant "roast beef slicer" from restaurant depot for cutting cake layers. I'm kindof hankering for a new chef's knife... One of my neighbors came home with 500 dollars worth of Shun knives last year…I found lots of excuses to keep borrowing them. But then I dispaired of figuring out which models were a "true" damascus, and there's no way I'm going to buy a knife without trying it first, so that cut my online shopping short. Should I go to Japan, though, I'll find a few knife stores and try things out. The bug got me briefly, as I did a bunch of research yesterday, and I would like a really good chef’s knife.
