The wings and stuff have enough meat and skin to give up a lot of taste into the stock... I throw them away after, but they have given everything they have for the greater good, so i don't see this as a waste. Also, I typically have stock pre-made in the freezer or something... which means I can get to the soup part of the recipe quicker.
