My esteemed father, bless him, buys ground Dunkin' Donuts coffee on sale, generally 3-4 bags at a time. He throws the grounds into a tupperware container, keeps that in the fridge, and that's his coffee supply for a month or two. At one point, he bought a new coffeemaker that ground a cup of beans and brewed that fresh. He gave up on it after a few days because it, quotha "made the coffee taste funny". Hah. I don't keep coffee in the freezer. I just throw it away once it gets to be older than a week or a bit more because after that period of time the espresso goes noticeably downhill. It's important to buy decent coffee and store it so that it doesn't oxidise. I've stopped drinking coffee at my parents house because of this, they buy pre-ground ok quality stuff, but then keep it at Australian summer room temperature in an open packet. Because of this it tastes stale. So keep your coffee in the fridge or freezer (though I think I remember hearing that the freezer isn't ideal, though I still keep it there). Also getting whole beans and grinding them your self helps. There is actually a fifth variable, where you get your coffee from and how you store it.
