One of the big trade secrets in the restaurant biz is not cuttin meats into stew portions and always cooking the bones. You could cut about half an hour off this recipe by just leaving the butt on the bone and searing it in a dutch oven. put the dutchy on medium high heat, season your meat, add your oil and when the first wisp of smoke comes off the shimmering surface, put the whole butt in the pan. sear five mins a side or until crustilicious all aroundsies. Then add the juices, pop on a lid, and toss in 275 degree oven. Braise the bejesus out of it for 2-3 hours, and you dont even have to worry about the sucker. thats 10 quarters of footie ball, and no worries on din-din. if you gotta have the vedge, toss in 45 mins before evacuation, or after your second game of madden blanche in salty water and roast your veggies in a pan.
